Hmmmmmm. There’s nothing more delicious on a hot summer day than a fruit-topped cheesecake. This recipe has been in my family for a few generations. We love it because it’s easy to make. It’s no bake so it won’t heat up the kitchen. And it’s so delicious, you’ll want to eat it before you serve it to guests.
• Oreo graham cracker crust — pre-made
• 1 pkg. if cream cheese, softened
• 1/2 pt. whipping cream
• 3/4 cup powdered sugar
• 21-oz. can of Comstock cherries
Combine cream cheese with powdered sugar in a medium sized bowl. Whip whipping cream separately — not too stiff — and add to the cream cheese. Whip this all until creamy and pour into the crust. Then pour the cherries on top — you can use the Light Cherry or No Sugar Added varieties, too.
Chill at least 8 hours in the refrigerator.
