Macadamia Nut Rice Pudding

MACADAMIA NUT RICE PUDDING

¾-cup medium grain white rice
1 12-ounce can evaporated milk
½-cup chopped raw macadamia nuts
½-cup pitted and chopped dried plums (prunes)
¼-cup sugar
1 large egg, lightly beaten
1 Tablespoon melted butter
1 teaspoon vanilla extract
½-teaspoon ground cinnamon
¼-teaspoon kosher salt

Combine all ingredients in a mixing bowl and allow them to rest, covered, for 45 minutes. Preheat oven to 300 degrees F. Place mixture in a heavy oven proof baking dish with a lid and bake for 2 -2 ½ hours. Remove from oven and allow pudding to cool for about 30 minutes with lid on. Serve warm with a little heavy cream or your favorite chocolate sauce.
