A 22-year-old student at Cal Poly Pomona is majoring in Hotel, Restaurant and Tourism, the department that’s offering a class on wine. But he’s thinking about becoming a lawyer. He took the course because he figures that wine knowledge will be useful in his professional career.

“They say that 80 percent of business takes place at a bar, off-the-record-type stuff,’ Kappe said.
