Curried Potatoes

THis is one of my favorite ways to prepare potatoes in the winter, it’s from my cookbook,
Casual Cuisine: A Fusion Food Book. This recipe can easily be doubled or tripled. Enjoy!!!

CURRIED POTATOES

1 small onion, diced
2 Tablespoons olive oil
1 Tablespoon butter
1/8 teaspoon kosher salt
2 Tablespoons white cooking wine
1-2 teaspoons soy sauce
1 Tablespoon curry powder
3 medium red potatoes, boiled, peeled and cubed
3-4 scallions, sliced thin
plain yogurt

Place the onion, olive oil, butter and salt in a skillet over medium heat, stirring frequently. When the onions begin to soften and turn translucent, add the cooking wine, allowing it to reduce by at least one-fourth. Add the soy sauce and curry powder, stirring constantly for about one minute. Add potatoes, stirring constantly to coat with curry powder and heat through. Add a little water to prevent potatoes from sticking, if needed.
Garnish with scallions and/or yogurt, if desired. Serve as a side dish with meat or poultry.
