Black or White? Poggio’s colorblind when it comes to truffles.

Poggio’s Executive Chef Peter McNee’s returns fresh from the hunt and will proudly present his culinary version of Michael Jackson’s “Black or White” for just five nights from November 10-14.
Truffles from Alba in the Piemonte region of Italy will take center stage at Sausalito’s three-star Poggio trattoria. Chef McNee’s be featuring Piemontese masterpieces such as Raviolo con Uovo (ravioli with spinach, ricotta and soft egg yolk), Tajarin della casa con burro e salvia (homemade tagliatelle pasta with butter and sage), and Uova al tegamino (two pan fried organic eggs). Fresh truffles are generously shaved tableside for $35 per dish. For cooked preparations, Chef McNee uses the earthier black truffle for their ability to stand up to intense flavors. He stuffs black truffles under the skin of spit-roasted birds like game hen or in a braised pheasant meatloaf with chestnuts and savoy cabbage. Appetizers like sformato di porri with pecorino, tartufo nero and porcini crema are other traditional showcases of the black varieties.

To complement the tartufi, Wine Director Greg Altzman has selected wines from Piemonte which pair well with the earthy flavors and aroma of truffles including Barbaresco and Barolo. Wines will be available by the glass or bottle.
