The 7 Question Interview – Chef Bruce Sherman- The North Pond Restaurant – Chicago, IL

I don`t think there is a more picturesque setting for a restaurant in Chicago. We feel very fortunate that their head Chef, Bruce Sherman, took the time to answer our questions.

What is your earliest memory of loving food?
Comfort food comes to mind – braised lamb shanks at around seven years old, potato-stuffed veal breast – those are both great memories.

What was the first dish you perfected?
Can’t say I’ve “perfected” anything yet. Apricot-Yogurt chicken salad? Not something I’d ever deign to share at this stage of my career.

If you could only choose five(5) ingredients to cook with for one month what would they be?
Butter, Pork, Olive oil, Potatoes, Fennel

What is your favorite breakfast?
Chilaquiles con chorizo.

Name three(3) people you would love to have cook for you?
My mother, Bernard Loiseau, Madeleine Kamman

What is the most important decision you have ever made?
To not pursue law, medicine or finance.

If you had one meal left on this earth, what would it be and who would you enjoy it with?
Sloppy cheeseburger and hand-cut fries with my wife and kids.
