The atmosphere is classy but casual and the overall aesthetic is very well thought out. It has an upscale rustic vibe with hipster accents like string lights.
They offer French comfort food you can’t pass up. Our one big tip, is do not leave the premises without trying their brussel sprouts.
We had the distinct pleasure of chatting with their executive chef, Devon Junkin.
What is your earliest memory of loving food?
My Swedish Great-Grandmother’s cooking
What was the first dish you perfected?
I don’t think any dish can really be perfected, you just strive towards it
If you could only choose five(5) ingredients to cook with for one month what would they be?
A good olive oil, a good red wine vinegar, salt, hearty greens, and salmon
What is your favorite breakfast?
Chilaquiles
Name three(3) people you would love to have cook for you?
Ferran Adria, Masaharu Morimoto, and my wife
What is the most important decision you have ever made?
Moving to Chicago to work and eat in some of the best restaurants and, of course, marrying my wife
If you had one meal left on this earth, what would it be and who would you enjoy it with?
Swedish Pancakes and Lingonberries with my wife and daughter
