High Priced Highballs: The New San Francisco Treat

At Harry Denton’s Starlight Room 31 floors above Union Square, master mixologist Jacques Bezuidenhout is blending booze and bending minds. Of the four high-priced cocktails he’s concocted, Jacques says, “I’d hate for these to become the next Cosmopolitans, because bartenders would inevitably butcher them.
The high balls range from $80 up to $650 and include unusual blends of superpremium spirits.
• Heavenly Dram @ $80 — Macallan’s 25-year-old single malt Scotch, Garvey Pedro Ximinez Sherry 1860, lemon juice, honey-flavored simple syrup and ice.
• Elegancia @ $90 — Herrquem Seleccion Suprema tequila (but tastes more like cognac), Chateau d’Yaduem Sauternes, rooibos tea and orange bitters.
• Angels Share @ $TBD showcases Louis XIII de Remy Martin Cognac, Domaine Charbay’s Nostalgie Black Walnut Liqueur, Porto Rocha 20 Year Old Tawny, 110-proof Chartreuse VEP liqeur, and a match to set it on fire.
• Drinking the Stars @ $375 for a 750 ml bottle and $650 for a magnum — Infused 1979 Chateau de Ravignan Armagnac with Madagascar vanilla bean, orange peel and raisin, poured directly into flutes, and finished with 1996 Dom Perignon Champagne.
